Rome — The Theatre of Street Food
Rome turned humble cooking into an art: fried bites, pizza by the slice and handheld sweets tell centuries of popular history.

Supplì
Rice croquettes in ragù with a molten mozzarella heart, fried golden. Found in every pizza-by-the-slice shop.
Born in 19th-century Roman fry shops; the name comes from the French 'surprise' for the mozzarella hidden inside.

Pizza al Taglio
Long-leavened pizza, crisp and light, cut into rectangles and sold by weight. Plain, red or topped.
A 20th-century Roman invention, perfected by bakers like Gabriele Bonci; 'pizza bianca' is a bakery classic.

Trapizzino
A pocket of pizza bianca filled with Roman classics: chicken cacciatora, meatballs in sauce, tongue in green salsa.
Created in Testaccio in 2008, blending trattoria tradition with contemporary street food.

Maritozzo
A soft oval brioche filled with hand-whipped cream. A breakfast or handheld sweet that symbolises Rome.
An ancient Roman treat, once given by suitors (the 'maritozzi') with a ring hidden inside.

Carciofo alla Giudia
The artichoke opened like a flower and twice-fried until crisp and golden. The icon of Ghetto cuisine.
A recipe of the Roman Jewish community, among the oldest in Europe; enjoyed mostly from winter to spring.

Filetti di Baccalà
Battered cod fillets fried until crisp outside and soft inside. A fry-shop ritual.
A popular Roman dish tied to meatless days, still served in the historic fry shops of the center.

Fried Zucchini Flowers
Zucchini flowers stuffed with mozzarella and anchovy, in light batter and fried. An essential starter.

Lazio's Red Soul
The region's only red DOCG, from the Piglio and Anagni area. A full-bodied, spicy wine with notes of red fruit and violet. Great with Lazio meats and cheeses.

A legendary white tied to the tale of Bishop Fugger, produced on the shores of Lake Bolsena. Fresh and easy-drinking, ideal with lake fish.
